These are the matcha cakes I made over the weekend. The first one I followed the recipe and it resulted in a firm cake, maybe it was because it wasn’t brought to room temp before serving? So I tried it again the morning after! The adjustments I made left me with a soft and moist cake, even after being put in the fridge over night! The frosting was mascarpone cream cheese, I love the taste but it is very hard to pipe with, not stiff enough for delicate designs.
